Ingredients: -1 lb. trimmed chicken breast -2 tbsp. mayonnaise -2 tbsp. honey dijon mustard -1 tsp. honey -2 cups of Panko breadcrumbs -a pinch of salt -a pinch of pepper Directions: -Preheat oven to 375 degrees -Pat the chicken with paper towel until dry -In a bowl, mix the mayonnaise, mustard, and honey until it has an even texture -Rub the mixture generously and evenly onto each chicken breast -Put the panko in another container and sprinkle on the salt and pepper -Dredge the chicken gently in the panko, coating evenly -Let the chicken rest for 5 minutes on a baking sheet -Place in oven, bake for 35-45 minutes, or until the internal temperature reads 165 and the juices run clear -Let it rest for 5 minutes before serving Enjoy!
